Milk Sourcing & Procurement Coordination
- Coordinate daily milk procurement from Bulk Milk Coolers (BMCs) and Village-Level Collection Centers (VLCs).
- Ensure uninterrupted raw milk supply in desired quality and volume.
- Work closely with the procurement and field team to maintain low COGS and consistent SNF/fat levels.
2. Production Management
- Oversee and manage daily production schedules of milk, curd, lassi, buttermilk, and other SKUs.
- Ensure optimum use of resources, minimal wastage, and zero stock-outs.
- Supervise staffing, process flows, and equipment operations to achieve production targets.
3. Milk & Product Quality Management
- Implement and monitor stringent quality checks at every stage – procurement, chilling, processing, and packaging.
- Maintain FSSAI compliance, hygiene standards, and regulatory documentation.
- Troubleshoot any deviation in quality and work on root cause analysis.
4. Quality Assurance & Lab Oversight
- Lead the in-house QA lab for milk and dairy product testing.
- Ensure proper documentation, test logs, and batch-wise product QC reports.
- Regularly audit QA processes and ensure corrective actions are implemented.
5. Plant Maintenance & Infrastructure
- Manage the preventive and breakdown maintenance schedule for boilers, chillers, pasteurizers, packaging machines, etc.
- Coordinate with vendors and AMC partners for timely repairs and spares.
- Maintain high plant uptime and machine efficiency.
6. Logistics & Dispatch Management
- Oversee the daily dispatch of products to Distribution Points and market hubs.
- Ensure cold chain integrity, vehicle routing optimization, and timely delivery.
- Work with logistics partners and in-house teams to improve service levels.
7. New Product Development (NPD)
- Support the R&D/product team in trial runs, process stabilization, and packaging innovation for new SKUs.
- Facilitate pilot batch testing and scale-up of new dairy products.
8. Plant Profitability & Cost Optimization
- Monitor plant performance metrics, costs, output, and yield ratios.
- Work with finance to analyze cost drivers and implement savings plans.
- Drive initiatives for energy efficiency, raw material optimization, and labor productivity.
Ideal Candidate Profile Required Experience & Skills
- 7+ years of experience in dairy plant operations, preferably in packaged milk & fermented dairy products.
- Degree in Dairy Technology or Food Technology (B.Tech/M.Tech from reputed institute preferred).
- Strong understanding of milk processing, pasteurization, fermentation, and packaging lines.
- Proficient in plant operations, production planning, quality control, and compliance.
- Experience in managing cross-functional teams, plant audits, and large production volumes.
